Description

La cecina es un producto estrella en la gastronomía tradicional leonesa. Bocado de reyes en la edad media, su consumo se hace popular en los siglos XVI y XVII. El 95% de la cecina que se come en España se elabora en León. Es carne de vacuno sin hueso, para cuya conservación se somete a salazón y un largo proceso de curado al aire y al humo de leña de roble o encina.

Las partes utilizadas son la tapa, la contra y la babilla que proceden de los cuartos traseros de la res. Los animales rigurosamente seleccionados tienen una edad mínima de cinco años y un peso mínimo de 1000 kg. Es un alimento saludable por su concentración de ácidos grasos monoinsaturados, de delicada textura e intensos aroma y sabor. Se consume directamente de la pieza, cortado en finas lonchas.
